During the fall, I cravvvve pumpkin products. It's just such a seasonal taste that feels so good on this crisp fall days. Many of the pumpkin flavored foods are indulgent and high in sugar which is fine every now and then but it's great to be able to satisfy the craving without all the extra sugar and junk.
Pumpkin itself is a great, nutritious food that's high in fiber and contains beta-carotene which converts to vitamin A and is good for your eyes. It also has other benefits such as vitamin C, potassium and antioxidants. Adding pumpkin to your diet is a great addition but when it's heavily processed or on a pie crust with butter, sugar and whipped cream, the health benefits aren't as ideal.
In order to get the yummy pumpkin pie taste with a healthier twist, I created the healthy pumpkin pie smoothie. It's the perfect sunny fall day drink that could even count as a breakfast!
