Searching for some things to do for Dad? Perhaps reserving a tee time if he enjoys golfing or going for a family hike or bike ride. Enjoy a relaxing family picnic at a local park or even offer to play one of dad’s favorite sports. In my case, my girls and I would most likely be playing a game of basketball in our driveway. Sometimes, doing absolutely nothing but relaxing at home is the healthiest thing you could to for your mind and body. Especially since most dad’s work long hours and have very little time to sit down to relax.
The perfect end to Dad’s special day is enjoying a good old fashion barbeque. Here’s one of my favorite summer side dish recipes I’ll be making this Father’s Day.
Grape Tomato and Fresh Mozzarella Salad
1 container of grape tomatoes, halved
4 fresh basil leaves, finely chopped
1 clove of garlic, minced
1 package of fresh mozzarella pearls
3 tablespoons Olive Oil
1 tablespoon Balsamic Vinegar
Salt and pepper to taste
Combine all ingredients in a mixing bowl and marinate for at least one hour. Feel free to marinate overnight for a more intense flavor. Enjoy!
